1.Carob-Walnut Brownies
Ingredients:
1/4 cup melted butter or ghee
6 Tablespoons carob powder
½ cup honey
2 egg whites
1/4 teaspoon salt
1/2 cup quinoa flour (Can substitute other GF flours)
2 teaspoons vanilla [optional]
1 cup chopped walnuts
How to make it:
Preheat the oven to 300 degrees.
Mix the honey, ghee, egg whites salt, and vanilla together.
Add the carob powder.
Mix in the flour and then the walnuts.
Put the mixture into a non-stick 8′ x 8′ pan (or use nonstick spray).
Bake for 30 – 35 minutes.
Let cool for 10 minutes before cutting.
2. Granola
Ingredients:
1-1/2 cup coarsely ground almonds or pumpkins seeds
1/2 cup millet flour
Sea salt [to taste]
1/4 to 1/2 teaspoon allspice or cinnamon
1 cup pecans
1 cup dried fruit (raisins or cranberries)
1/4 cup oil (Coconut)
1/4 cup honey
1 teaspoon vanilla (optional)
How to make it:
Preheat oven to 300 degrees Fahrenheit.
Mix dry ingredients.
Mix liquid ingredients [in separate bowl].
Stir together gently. Allow clumps to form.
Spread onto ungreased baking sheet.
Bake 20 minutes.
Stir very gently.
Bake another 10 minutes or until done.
Cool and enjoy!
